Fairmont Cheshire The Mere Opened in a Northwest England Country Estate

 

Fairmont Hotels & Resorts opened its newest UK property last month: Fairmont Cheshire, The Mere. Set on 157 acres beside The Mere Lake just outside Knutsford, the countryside estate is Fairmont’s fourth hotel in the UK, joining The Savoy, A Fairmont Hotel; Fairmont Windsor Park; and Fairmont St Andrews.

The hotel offers 116 bedrooms, including 23 suites, an 18-hole championship-level golf course, and wellness experiences at Fairmont Spa. A driveway winds through landscaped parkland to a brick frontage, with an interior built around British heritage paired with contemporary design: mirror-like Japanese lacquer, natural stone, figured timber veneers, handcrafted zellige tiles, bold cement tiles, beaten metals and rustic timbers appear throughout the estate.

Despite its private, countryside setting, the location is well connected: Knutsford is minutes away, Manchester is under 30 minutes by road, and the Peak District is under an hour for those wanting a countryside walk or hike.

Dining

The estate’s flagship restaurant, Gordon Ramsay at The Mere, serves refined British cuisine with signature dishes including Beef Wellington and robata grill selections, alongside an extensive wine list. It’s open daily for breakfast and dinner, with lakeside terrace seating.

The Orangery, a light-filled atrium restaurant, serves afternoon tea and lighter bites, along with champagne, cocktails and freshly shucked oysters.

The Club Lounge & Bar overlooks the lake and golf course, offering a curated drinks menu in a more relaxed setting.

Spa and Wellness

Housed in a converted Victorian stable block and designed by Bergman Design House, The Fairmont Spa features a 20-meter thermal pool, a Finnish barrel sauna, ice baths, a hammam steam room and a salt inhalation chamber. You can choose from 20 treatments across six treatment rooms, using products from Wildsmith Skin, KAMA Ayurveda and 111Skin, or book the Rasul Room’s traditional cleansing ritual. A Spa Cafe offers healthy bites and smoothies.

Fitness facilities include Technogym equipment, dedicated cardio and strength zones, and a covered outdoor studio for cycling and wellness classes.
